- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1 large egg, lightly beaten (for egg wash)
- 2 tablespoons granulated sugar, for sprinkling
Instructions
- Preheat: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Mix the filling: In a bowl, combine pineapple chunks, shredded coconut, lime zest, lime juice, brown sugar, cornstarch, and vanilla extract. Stir until evenly mixed and the cornstarch is fully incorporated.
- Prepare the dough: Roll out pie dough on a lightly floured surface to even thickness. Use a 4-inch round cutter or glass to cut circles from the dough.
- Assemble pies: Place about 1 to 1 1/2 tablespoons of filling in the center of each dough circle. Fold the dough over to form a half-moon and press the edges firmly with a fork to seal. Make a small vent in the top of each pie.
- Finish before baking: Arrange pies on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with granulated sugar.
- Bake: Bake in the preheated oven for 20 to 25 minutes or until the pies are golden brown and the filling is bubbling.
- Cool and serve: Let the pies cool on the baking sheet for at least 10 minutes to allow the filling to set, then serve warm or at room temperature.

- Chill the dough before cutting to get flakier results.
