- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- ¼ cup granulated sugar
- 16 ounces Philadelphia cream cheese, softened
- ½ cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 325°F (160°C) and line a 9×9 pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and sugar until evenly moistened, then press into the pan to form a crust.
- Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, vanilla, and eggs. Mix until just combined.
- Pour filling over cooled crust and bake 35–40 minutes until center is mostly set.
- Cool completely before topping.
- In a saucepan, combine strawberries, cornstarch, powdered sugar, and lemon juice. Cook over medium heat until thickened. Let cool, then spread over cheesecake layer.
- Chill for at least 3 hours before slicing and serving.
