- 2 cups graham cracker crumbs

- 1 1/2 cups cold milk
- 1/2 cup chopped pecans (for topping)

- 1 cup brown sugar
- 1/2 cup heavy cream
- 1/4 cup butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9×13 inch dish to form a crust. Chill in the refrigerator.
- In a bowl, beat softened cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread evenly over the crust. Return to refrigerator.
- In another bowl, whisk together vanilla pudding mix and cold milk until thickened. Spread over the cream cheese layer and chill.
- For the pecan pie topping, combine brown sugar, heavy cream, butter, salt, and vanilla extract in a saucepan over medium heat. Stir until the mixture begins to boil. Simmer for 2-3 minutes. If desired, add cornstarch to thicken.
- Stir in chopped pecans, then let the mixture cool slightly before pouring over the pudding layer. Spread evenly and refrigerate until set.
- Top with remaining whipped topping and garnish with pecan halves.
- Chill for at least 4 hours or overnight before serving.
