- 1 cup (2 sticks) unsalted butter, cold and cubed
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 2 teaspoons vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared pan.
- Bake for 18–20 minutes, until lightly golden.
- While the crust bakes, whisk together eggs, corn syrup, brown sugar, vanilla, and salt. Stir in chopped pecans.
- Pour filling over the hot crust and return to the oven.
- Bake for 30–35 minutes or until set but slightly jiggly in the center.
- Cool completely on a wire rack, then chill for at least 2 hours before slicing.
- Lift out using parchment paper and cut into bars. Serve at room temperature.
Notes
- Use cold butter for a flaky crust.
- Toasting pecans adds extra depth of flavor.
- Chilling before slicing helps achieve clean cuts.
- Bars can be frozen for up to 2 months.
