Description

Peaches & Cream Cheese Loaf is a moist and flavorful bread that combines the sweetness of peaches with the creamy richness of cream cheese. It’s perfect for breakfast or as a dessert.

For the Loaf:

  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (300 g) granulated sugar
  • 1/2 tablespoon lemon zest
  • 2 large eggs
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 1 cup (240 ml) whole milk
  • 15 oz (425 g) can sliced peaches, drained and diced

For the Cream Cheese Layer:

  • 8 oz (225 g) cream cheese, softened
  • 1 egg, beaten
  • 1/4 cup (50 g) granulated sugar

Instructions

  • Preheat the Oven and Prepare the Pan:

    • Preheat your oven to 375°F (190°C). Grease and flour a 9×5-inch loaf pan.
  • Prepare the Loaf Batter:

    • In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
    • Add the sugar and lemon zest, and beat until light and fluffy.
    • Beat in the eggs one at a time, ensuring each is fully incorporated.
    • In a separate bowl, whisk together the flour, salt, baking powder, and cinnamon (if using).
    • Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing just until combined.
    • Gently fold in the diced peaches.
  • Prepare the Cream Cheese Layer:

    • In a small bowl, mix together the softened cream cheese, beaten egg, and sugar until smooth.
  • Assemble the Loaf:

    • Pour half of the loaf batter into the prepared pan.
    • Spread the cream cheese mixture evenly over the batter.
    • Top with the remaining loaf batter, spreading it evenly over the cream cheese layer.
  • Bake:

    • Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:

    • Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a firmer loaf, refrigerate it for 30 minutes before slicing.
  • Ensure the peaches are well-drained to prevent excess moisture in the batter
