- 6 fresh peaches, peeled, pitted, and sliced (about 5 cups)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon

- 1 cup all-purpose flour
- 1/4 cup granulated sugar (for topping)

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into cubes
- 1/4 cup boiling water
- 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon (for sprinkling)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large saucepan, combine peaches, granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens slightly (about 5–7 minutes). Pour into a 9×13 inch baking dish.
- In a large bowl, mix flour, sugar, brown sugar, baking powder, and salt.
- Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in boiling water just until combined to form a dough.
- Drop spoonfuls of the dough over the peach mixture. Spread slightly but do not completely cover.
- Sprinkle cinnamon-sugar mixture evenly over the top.
- Bake for 30–35 minutes or until the topping is golden and cooked through.
- Let cool slightly and serve warm, optionally with vanilla ice cream.
Notes
- Use canned or frozen peaches if fresh ones are unavailable (drain excess liquid).
- Adjust sugar based on peach sweetness.
- Add a pinch of nutmeg for deeper flavor.
- Serve with whipped cream or ice cream for an indulgent touch.
