Description

  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into cubes
  • 1/4 cup boiling water
  • 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon (for sprinkling)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large saucepan, combine peaches, granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens slightly (about 5–7 minutes). Pour into a 9×13 inch baking dish.
  3. In a large bowl, mix flour, sugar, brown sugar, baking powder, and salt.
  4. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Stir in boiling water just until combined to form a dough.
  6. Drop spoonfuls of the dough over the peach mixture. Spread slightly but do not completely cover.
  7. Sprinkle cinnamon-sugar mixture evenly over the top.
  8. Bake for 30–35 minutes or until the topping is golden and cooked through.
  9. Let cool slightly and serve warm, optionally with vanilla ice cream.

Notes

  • Use canned or frozen peaches if fresh ones are unavailable (drain excess liquid).
  • Adjust sugar based on peach sweetness.
  • Add a pinch of nutmeg for deeper flavor.
  • Serve with whipped cream or ice cream for an indulgent touch.
