Description

A comforting bowl of pasta with savory sausage, tender fennel, and melted pecorino cheese.


Ingredients

  • 400 g dried pasta
  • 300 g Italian sausage
  • 1 medium fennel bulb, thinly sliced
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 80 g pecorino cheese, finely grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Heat olive oil in a wide skillet over medium heat.
  3. Add sausage and cook until browned.
  4. Stir in fennel and garlic and cook until tender.
  5. Boil pasta until al dente and reserve some cooking water.
  6. Add pasta to the skillet and toss gently.
  7. Mix in pecorino, salt, pepper, and pasta water as needed.
  8. Serve hot with extra cheese.
