Ingredients

- 400 g dried pasta
- 300 g Italian sausage
- 1 medium fennel bulb, thinly sliced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 80 g pecorino cheese, finely grated
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Heat olive oil in a wide skillet over medium heat.
- Add sausage and cook until browned.
- Stir in fennel and garlic and cook until tender.
- Boil pasta until al dente and reserve some cooking water.
- Add pasta to the skillet and toss gently.
- Mix in pecorino, salt, pepper, and pasta water as needed.
- Serve hot with extra cheese.
