Description

Ingredients

  • 12 ounces spaghetti
  • 1 1/2 cups finely grated parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons freshly cracked black pepper
  • 1 tablespoon salt (for pasta water)
  • 3/4 cup reserved pasta water


Instructions

  1. Grate the parmesan cheese and set aside. Measure out the black pepper and butter.
  2. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 3/4 cup of pasta water and drain the rest.
  3. In a skillet, melt butter over medium heat. Add cracked pepper and toast for 1 minute.
  4. Pour in the reserved pasta water and bring to a simmer.
  5. Gradually add the grated parmesan while whisking until the sauce is smooth.
  6. Add the cooked spaghetti to the pan and toss until evenly coated.
  7. Let the pasta rest for a minute, then serve with extra cheese and pepper.
