Description

Ingredients

  • 5 to 6 large croissants, preferably a day old
  • 1 cup ricotta cheese
  • 2 medium ripe pears, thinly sliced
  • 4 large eggs
  • 1½ cups whole milk
  • ½ cup heavy cream
  • ¼ cup sugar
  • 1½ teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup slivered almonds
  • Maple syrup, for serving


Instructions

  1. In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt until smooth.
  2. Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  3. Slice the croissants in half. Layer the bottom of the dish with croissants, spread dollops of ricotta, add a layer of sliced pears, and repeat.
  4. Pour the custard evenly over the top, pressing gently to soak. Cover and refrigerate overnight.
  5. Preheat your oven to 350°F (175°C).
  6. Uncover the dish, sprinkle with slivered almonds, and bake for 40 to 45 minutes until puffed, golden, and set.
  7. Let rest for 5 minutes. Drizzle with warm maple syrup before serving.
