- 5 to 6 large croissants, preferably a day old
- 1 cup ricotta cheese
- 2 medium ripe pears, thinly sliced
- 4 large eggs
- 1½ cups whole milk
- ½ cup heavy cream
- ¼ cup sugar
- 1½ teaspoons vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup slivered almonds
- Maple syrup, for serving
Instructions
- In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt until smooth.
- Lightly grease a 9×13-inch baking dish with butter or cooking spray.
- Slice the croissants in half. Layer the bottom of the dish with croissants, spread dollops of ricotta, add a layer of sliced pears, and repeat.
- Pour the custard evenly over the top, pressing gently to soak. Cover and refrigerate overnight.
- Preheat your oven to 350°F (175°C).
- Uncover the dish, sprinkle with slivered almonds, and bake for 40 to 45 minutes until puffed, golden, and set.
- Let rest for 5 minutes. Drizzle with warm maple syrup before serving.
