Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
  • 1.5 cups diced onion
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 (10 oz) can diced tomatoes
  • 8 oz dry small pasta
  • 1/2 cup milk or heavy cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded Cheddar cheese
  • 1/3 cup thinly sliced scallions (for garnish)

Instructions

  1. Add olive oil to a 4-5 quart sauté pan over medium-high heat.
  2. Fry the smoked kielbasa and onions until the onions are translucent and the sausage is lightly browned.
  3. Add the minced garlic and cook until fragrant, about 30 seconds.
  4. Pour in the chicken broth, diced tomatoes, milk or cream, dry pasta, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat and simmer uncovered for about 15 minutes, or until the pasta is tender and most of the liquid is absorbed.
  6. Remove the pan from heat and stir in 1/2 cup of the shredded Cheddar cheese.
  7. Sprinkle the remaining cheese on top, cover the pan, and let it sit until the cheese is melted, spotty brown, and bubbly.
  8. Garnish with sliced scallions and serve hot.

Notes

  • This recipe serves 4 generous portions. Double the ingredients if feeding a crowd or saving leftovers.
  • Use turkey or chicken sausage for a lighter version.
