Description

Ingredients

  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 1 cup plain full-fat yogurt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium apples (1 grated, 1 chopped)
  • 1 teaspoon ground cinnamon
  • ½ cup shelled and chopped pistachios


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the yogurt, oil, sugar, eggs, and vanilla extract until smooth. Stir in the grated and chopped apples.
  3. Sift in the flour, baking powder, salt, and cinnamon. Fold gently until just combined.
  4. Pour the batter into the prepared pan and smooth the top. Sprinkle with chopped pistachios.
  5. Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Slice and serve as is or with a dollop of yogurt or whipped cream.
