- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- 1 cup plain full-fat yogurt
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 medium apples (1 grated, 1 chopped)
- 1 teaspoon ground cinnamon
- ½ cup shelled and chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the yogurt, oil, sugar, eggs, and vanilla extract until smooth. Stir in the grated and chopped apples.
- Sift in the flour, baking powder, salt, and cinnamon. Fold gently until just combined.
- Pour the batter into the prepared pan and smooth the top. Sprinkle with chopped pistachios.
- Bake for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve as is or with a dollop of yogurt or whipped cream.
Notes
- Use firm apples like Honeycrisp or Pink Lady for best results.
- Lightly toast pistachios before using for enhanced flavor.
- Store leftovers in an airtight container at room temperature for up to 3 days.
