- 1 cup quinoa, soaked overnight, drained, and pat dry
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a loaf pan with parchment paper and set aside.
- Heat a skillet over medium-high heat until hot.
- Add the soaked and dried quinoa to the skillet and toast, stirring constantly, for 2–4 minutes until it starts to pop and smell nutty. Remove from heat once slightly browned.
- In a large bowl, melt the chocolate chips and coconut oil together, using 15-second increments in the microwave and stirring between each round until fully melted.
- Stir the toasted quinoa into the melted chocolate mixture until evenly coated.
- Pour the mixture into the prepared loaf pan and spread it into an even layer.
- Freeze for 1 hour until set.
- Slice into bars and store in a Ziploc bag for long-term storage.
Notes
- Make sure quinoa is fully dry before toasting to ensure crispiness.
- Use dairy-free chocolate chips for a vegan version.
- Store bars in the freezer for up to 2 months.
