Description

These crunchy chocolate quinoa bars are a delicious no-bake treat packed with nutty toasted quinoa and rich chocolate. Perfect for a healthy snack or a sweet bite on the go!


Ingredients

  • 1 cup quinoa, soaked overnight, drained, and pat dry
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. Heat a skillet over medium-high heat until hot.
  3. Add the soaked and dried quinoa to the skillet and toast, stirring constantly, for 2–4 minutes until it starts to pop and smell nutty. Remove from heat once slightly browned.
  4. In a large bowl, melt the chocolate chips and coconut oil together, using 15-second increments in the microwave and stirring between each round until fully melted.
  5. Stir the toasted quinoa into the melted chocolate mixture until evenly coated.
  6. Pour the mixture into the prepared loaf pan and spread it into an even layer.
  7. Freeze for 1 hour until set.
  8. Slice into bars and store in a Ziploc bag for long-term storage.

Notes

  • Make sure quinoa is fully dry before toasting to ensure crispiness.
  • Use dairy-free chocolate chips for a vegan version.
  • Store bars in the freezer for up to 2 months.
