Description

This Moroccan Carrot Salad is a vibrant and flavorful side dish made with tender carrots tossed in a sweet, citrusy, and spiced dressing. Infused with cumin, cinnamon, paprika, and fresh herbs, it’s a refreshing and aromatic salad perfect for any meal.


Ingredients

  • 1 lb (450g) carrots, peeled and sliced into thin rounds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • 1 tbsp honey or maple syrup
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 2 tbsp fresh cilantro or parsley, chopped
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Bring a pot of water to a boil. Add the carrot slices and cook for 5-6 minutes, until just tender but still slightly crisp. Drain and let cool slightly.
  2. In a large mixing bowl, whisk together the olive oil, lemon juice, orange juice, honey or maple syrup, cumin, cinnamon, paprika, cayenne pepper (if using), salt, and pepper.
  3. Add the cooked carrots to the bowl and toss well to coat with the dressing.
  4. Stir in the chopped cilantro or parsley and sprinkle with toasted sesame seeds if desired.
  5. Serve warm, at room temperature, or chilled for a refreshing side dish.

Notes

  • For extra flavor, toast the spices in the olive oil for 1-2 minutes before mixing with the rest of the dressing.
  • This salad tastes even better after sitting for a few hours to let the flavors meld.
  • Swap carrots for colorful heirloom varieties for a stunning presentation.
