- Prepare the Meat Mixture: In a large bowl, combine ground meat with finely chopped onion, minced garlic, and chopped fresh parsley. Add cumin, coriander, paprika, cinnamon, salt, pepper, and drizzle olive oil. Mix thoroughly by hand or spoon until evenly combined and the mixture feels slightly sticky for shaping.
- Shape the Kofta onto Skewers: Divide the mixture into equal portions. Take a handful and gently mold around each skewer, pressing firmly to form elongated oval shapes. Ensure there are no gaps and the meat sticks well to the skewers.
- Preheat and Grill: Heat your grill or grill pan to medium-high. Brush grates lightly with olive oil to prevent sticking. Grill skewers for 4-5 minutes per side, rotating carefully to develop a char while keeping the inside juicy.
