Description

Ingredients

  • 1 medium red bell pepper, finely diced
  • 1/3 cup red onion, finely chopped
  • 1 small jalapeño, seeds removed and minced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper


Instructions

  1. Ensure corn is thawed if using frozen and pat dry.
  2. In a large mixing bowl, combine the corn, red bell pepper, red onion, jalapeño, and cilantro.
  3. Drizzle lime juice and olive oil over the mixture.
  4. Gently stir until evenly combined.
  5. Add salt and black pepper, then mix again.
  6. Let the salsa rest for at least 20 minutes before serving.
  7. Serve chilled or at room temperature.

Notes

  • For milder flavor, rinse chopped red onion under cold water before using.
  • Adjust jalapeño quantity to control spice level.
