- 1 medium red bell pepper, finely diced
- 1/3 cup red onion, finely chopped
- 1 small jalapeño, seeds removed and minced
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
Instructions
- Ensure corn is thawed if using frozen and pat dry.
- In a large mixing bowl, combine the corn, red bell pepper, red onion, jalapeño, and cilantro.
- Drizzle lime juice and olive oil over the mixture.
- Gently stir until evenly combined.
- Add salt and black pepper, then mix again.
- Let the salsa rest for at least 20 minutes before serving.
- Serve chilled or at room temperature.
Notes
- For milder flavor, rinse chopped red onion under cold water before using.
- Adjust jalapeño quantity to control spice level.
- Best enjoyed within 3 days when stored in an airtight container in the refrigerator.
