Description

These melting sweet potatoes are roasted to golden perfection, crisp on the edges and buttery soft in the center, infused with garlic, herbs, and rich savory flavor.


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch thick rounds
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup vegetable broth


Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine melted butter, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Arrange sweet potato rounds in a single layer on the baking sheet. Brush with the butter mixture.
  4. Roast for 15 minutes, then flip the rounds and brush again with more butter mixture.
  5. Roast for another 15 minutes, then pour vegetable broth evenly over the rounds.
  6. Continue roasting for 10–15 minutes until centers are tender and edges are golden brown.
  7. Let rest 5 minutes out of the oven. Serve with remaining sauce and garnish with fresh herbs if desired.

Notes

  • For a sweeter twist, add maple syrup to the butter mixture.
  • Use a metal spatula for easy flipping and to prevent tearing.
  • Reheat leftovers in the oven for the best texture.
