- 2 large sweet potatoes, peeled and cut into 1-inch thick rounds
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup vegetable broth
Instructions
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- In a small bowl, combine melted butter, olive oil, minced garlic, chopped thyme, salt, and pepper.
- Arrange sweet potato rounds in a single layer on the baking sheet. Brush with the butter mixture.
- Roast for 15 minutes, then flip the rounds and brush again with more butter mixture.
- Roast for another 15 minutes, then pour vegetable broth evenly over the rounds.
- Continue roasting for 10–15 minutes until centers are tender and edges are golden brown.
- Let rest 5 minutes out of the oven. Serve with remaining sauce and garnish with fresh herbs if desired.
Notes
- For a sweeter twist, add maple syrup to the butter mixture.
- Use a metal spatula for easy flipping and to prevent tearing.
- Reheat leftovers in the oven for the best texture.
