Description

These Melted Cheese BBQ Brisket Sandwiches are the ultimate comfort food—ooey, gooey, cheesy goodness meets smoky, tender brisket, all tucked between buttery, golden sourdough bread. Perfect for lunch, dinner, or a satisfying indulgence any time of day!


Ingredients

  • 1 lb cooked brisket, shredded
  • 1/2 cup BBQ sauce (your favorite)
  • 4 slices sourdough bread
  • 1 cup shredded cheddar cheese
  • 1 tbsp butter
  • 1/2 cup caramelized onions
  • Salt and pepper, to taste

Instructions

  1. In a bowl, toss the shredded brisket with BBQ sauce until well coated. Set aside.
  2. Heat a skillet over medium heat and melt half the butter.
  3. Place two slices of bread on the skillet and layer each with shredded cheese, a generous scoop of BBQ brisket, caramelized onions, and another sprinkle of cheese. Top with the remaining slices of bread.
  4. Spread the remaining butter on the top slices of bread.
  5. Cook the sandwiches until the bottom is golden and crispy, about 3–4 minutes. Carefully flip and grill the other side until golden and cheese is melted.
  6. Remove from skillet, let rest for a minute, then slice and serve warm.

Notes

  • You can use store-bought or leftover smoked brisket.
  • Swap cheddar for gouda, provolone, or pepper jack for a flavor twist.
  • Add pickles or jalapeños for extra zing and crunch.
  • Use a panini press for an evenly melted, crispy result.
