- 1 lb cooked brisket, shredded
- 1/2 cup BBQ sauce (your favorite)
- 4 slices sourdough bread
- 1 cup shredded cheddar cheese
- 1 tbsp butter
- 1/2 cup caramelized onions
- Salt and pepper, to taste
Instructions
- In a bowl, toss the shredded brisket with BBQ sauce until well coated. Set aside.
- Heat a skillet over medium heat and melt half the butter.
- Place two slices of bread on the skillet and layer each with shredded cheese, a generous scoop of BBQ brisket, caramelized onions, and another sprinkle of cheese. Top with the remaining slices of bread.
- Spread the remaining butter on the top slices of bread.
- Cook the sandwiches until the bottom is golden and crispy, about 3–4 minutes. Carefully flip and grill the other side until golden and cheese is melted.
- Remove from skillet, let rest for a minute, then slice and serve warm.
Notes
- You can use store-bought or leftover smoked brisket.
- Swap cheddar for gouda, provolone, or pepper jack for a flavor twist.
- Add pickles or jalapeños for extra zing and crunch.
