- 2 large boneless skinless chicken breasts
- 6 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/3 cup freshly grated Parmesan cheese
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh basil, for garnish
Instructions
- Heat a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Add olive oil to the skillet and sear the chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium and add butter to the skillet. Once melted, stir in garlic and sun-dried tomatoes. Cook for 2 minutes.
- Pour in chicken broth, scraping up any browned bits. Stir in heavy cream and Parmesan cheese. Let simmer for 3–5 minutes.
- Return chicken to the skillet and spoon sauce over the top. Simmer for 2 more minutes.
- Sprinkle with red pepper flakes and fresh basil. Serve hot.
Notes
- Use freshly grated Parmesan for better flavor and melting.
- Reserve some pasta water if serving with pasta to loosen the sauce.
- Add greens like spinach at the end for a nutrition boost.
