It’s comfort food with a gourmet twist!

Ingredients

Units Scale
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a gentle kick)
  • 1 cup vegetable or chicken broth
  • 1/2 cup heavy cream
  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 4–5 minutes until softened.
  2. Stir in the minced garlic, sun-dried tomatoes, oregano, and red pepper flakes, cooking for another 1–2 minutes until fragrant.
  3. Pour in the vegetable or chicken broth and bring to a gentle simmer.
  4. Reduce the heat to low, stir in the heavy cream, and cook for 2 minutes to warm through.
  5. Add the butter beans and Parmesan cheese, stirring gently to coat the beans in the sauce.
  6. Season with salt and black pepper to taste. Let the mixture simmer for 3–4 minutes, allowing the sauce to thicken slightly.
  7. Remove from heat and garnish with chopped basil or parsley before serving.

Notes

  • For a vegan version, use plant-based cream and Parmesan-style cheese.
  • This dish pairs beautifully with garlic bread, pasta, or roasted vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
