Description

Crispy baked tater tots threaded onto shareable skewers, melted cheddar, tangy sour cream, fresh scallions and juicy cherry tomatoes, a fun crowd-pleasing appetizer or party snack.


Ingredients

  • 32 frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup scallions, finely sliced
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup black olives, sliced
  • 1 to 2 jalapeños, thinly sliced, optional
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine diced cherry tomatoes, sliced scallions, sliced black olives, and jalapeños with a pinch of salt and black pepper; set aside.
  3. Spread the frozen tater tots in a single layer on the prepared baking sheet, drizzle with olive oil, and bake for 20 minutes until golden brown and extra crispy, turning once if desired.
  4. Remove the tots from the oven and let them cool for 1 to 2 minutes so they hold together when skewered.
  5. Thread 4 to 5 crispy tater tots onto each wooden skewer, spacing slightly, and sprinkle or tuck shredded cheddar cheese between and on top of the tots.
  6. Return the assembled skewers to the oven for 3 to 5 minutes until the cheese is melted and bubbly.
  7. Remove skewers from oven, drizzle with sour cream and scatter the reserved fresh topping mixture over the skewers.
  8. Arrange skewers on a platter and serve immediately while warm and gooey.

Notes

  • Soak wooden skewers in water for 5 minutes before using to reduce the chance of burning.
  • Bake on the top rack for maximum crispiness.
  • Add fresh toppings just before serving to keep them bright and not soggy.
  • For extra crunch, broil for 1 to 2 minutes at the end, watching carefully.
