- 4 slices sourdough bread
- 1 1/2 cups shredded mozzarella cheese (about 170 grams)
- 1 cup chopped kimchi, lightly squeezed to remove excess liquid
- 2 tablespoons unsalted butter, softened
Instructions
- Lightly chop the kimchi and pat it dry with a paper towel to remove excess moisture.
- Spread softened butter evenly on one side of each slice of bread.
- Place a nonstick skillet over medium low heat and allow it to warm gently.
- Place two slices of bread butter side down in the skillet. Sprinkle half of the shredded mozzarella on each slice, top evenly with chopped kimchi, then add the remaining mozzarella. Cover with the remaining bread slices, butter side up.
- Cook for 3 to 4 minutes per side, until the bread is golden brown and the cheese is fully melted. Adjust heat as needed to avoid burning.
- Remove from the pan and let rest for 1 minute before slicing diagonally.
- Serve warm while the cheese is gooey and melted.
Notes
- Cook on medium low heat to ensure the cheese melts before the bread browns too much.
- Do not overload with kimchi to prevent sogginess.
- Press gently with a spatula for an even crisp texture.
