Description

Ingredients

  • 1 1/4 cups boiling water
  • 2 cups kale, finely chopped, stems removed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper, to taste

Instructions

  1. Place couscous in a large bowl. Pour boiling water over couscous, cover, and let sit for 5 minutes. Fluff with a fork.
  2. Massage chopped kale with a pinch of salt for 2-3 minutes until softened.
  3. Add cherry tomatoes, red onion, cucumber, parsley, and feta (if using) to the couscous and kale.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  5. Pour dressing over the salad and toss well to combine.
  6. Chill for at least 30 minutes before serving to let flavors meld.
