- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 fresh peaches, pitted and sliced
- 1-2 jalapeños, thinly sliced (adjust to taste)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon apple cider vinegar
- Fresh cilantro, chopped, for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts for 5–6 minutes per side, or until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and ginger. Sauté for 30 seconds until fragrant.
- Add peaches and jalapeños, cooking for 2–3 minutes until softened.
- Stir in honey, soy sauce, and apple cider vinegar. Simmer the sauce for 3–4 minutes until slightly thickened.
- Return the chicken to the skillet and spoon sauce over each piece. Let simmer together for another 2–3 minutes to absorb flavor.
- Garnish with fresh chopped cilantro before serving. Enjoy hot with rice, quinoa, or grilled veggies.
Notes
- Adjust jalapeño quantity to control spice level; remove seeds for milder heat.
- Frozen or canned peaches can be used when fresh aren’t available—just reduce the honey slightly.
