- 4 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 32 oz ricotta cheese
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 package (5.1 oz) instant chocolate pudding mix
- 2 cups cold milk
- 8 oz whipped topping (Cool Whip or homemade)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Prepare chocolate cake mix with 3 eggs, water, and oil. Pour into prepared dish.
- In a separate bowl, mix ricotta, 1 egg, sugar, and vanilla until smooth.
- Spoon ricotta mixture over cake batter evenly. Do not mix.
- Bake uncovered for 1 hour. Let cake cool completely.
- Whisk pudding mix with cold milk until thick, then spread over cooled cake.
- Top with whipped topping and chill for at least 4 hours or overnight before serving.
