Ingredients

  • 1 cup plain flour / all-purpose flour, plus extra for rolling out
  • 1/4 tsp cooking salt (kosher salt)
  • 1 tbsp white sesame seeds
  • 1/3 cup water (just regular tap water)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white sesame seeds (for sprinkling)
  • 1/2 tsp salt flakes (for sprinkling)
  • Olive oil spray

Instructions

  1. Preheat the oven to 200°C / 400°F (180°C fan-forced).
  2. In a bowl, mix flour, 1 tbsp sesame seeds, and 1/4 tsp salt using a spatula. Make a well in the center and pour in the water and olive oil. Stir with the handle of the spatula until combined.
  3. Lightly flour the counter. Scrape out the dough and knead a few times to form a ball. Divide in half.
  4. Roll one half into a 3mm / 1/8″ thin oval shape. Place on parchment paper on a cutting board.
  5. Sprinkle with 1/2 tbsp sesame seeds and 1/4 tsp salt flakes. Roll thinner to 2mm / 1/12″.
  6. Cut into 5cm / 2″ squares using a pizza cutter or knife. Leave pieces as they are on the paper. Repeat with the second half of the dough.
  7. Transfer paper with cut dough to baking trays. Spray with olive oil.
  8. Bake both trays for 12 minutes. Then remove and rearrange to ensure even browning. Bake another 8–10 minutes until all pieces are light golden.
  9. Cool crackers on the trays for about 20 minutes. Serve with dips or cheese platters.

Notes

  • Thinner crackers (2mm) will yield a crispier texture.
  • Use a pizza cutter for clean, even cuts.
  • Don’t move the pieces after cutting; they’re too delicate when thin.
  • Adjust bake time as needed based on your oven’s hot spots.
