Description

This one-pot Chili Mac and Cheese is the ultimate comfort food mashup—hearty chili meets cheesy macaroni for a quick, flavor-packed weeknight dinner the whole family will love. Bold spices, lean ground beef, and gooey cheese come together in a saucy, satisfying dish!


Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 red capsicum / bell pepper, chopped
  • 500g / 1 lb ground beef (lean)
  • 800g / 28 oz crushed canned tomato
  • 420g / 14 oz red kidney beans, drained
  • 2 1/2 cups (625 ml) beef broth (or chicken broth)
  • 250g / 8 oz elbow macaroni pasta, uncooked
  • 2 cups (200g) shredded cheese (cheddar, Monterey Jack, or tasty cheese)
  • 1/4 cup coriander / cilantro, finely chopped (for garnish)
  • 1/2 tsp cayenne pepper or pure chili powder
  • 2 tsp paprika powder
  • 2 tsp cumin powder
  • 1 1/2 tsp onion powder (or garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 1/4 tsp salt

Instructions

  1. Heat oil in a large pot over high heat. Add garlic and onion, cooking for 1 minute.
  2. Add chopped capsicum and cook until the onion is translucent.
  3. Add ground beef and cook, breaking it up as it browns.
  4. Once beef is no longer red, add canned tomatoes, kidney beans, broth, macaroni, and all spices (except cheese).
  5. Stir, bring to a simmer, then reduce heat to medium. Cover and cook for 12 minutes or until macaroni is al dente.
  6. Turn off heat, stir in half the cheese until slightly saucy. Adjust salt and pepper to taste.
  7. Top with remaining cheese, cover, and let sit for 2 minutes until cheese melts.
  8. Garnish with chopped coriander if desired and serve hot.

Notes

  • Adjust cayenne or chili powder to control heat level.
  • Can substitute ground turkey or chicken for beef.
  • Use your favorite melty cheese blend.
  • Leftovers keep well refrigerated for 3–4 days.
