Instructions
- Preheat oven to 425°F (218°C). Line a baking sheet with parchment or foil for easier cleanup.
- Poke each sweet potato all over with a fork to allow steam to escape.
- Brush skins lightly with olive oil and sprinkle with salt if desired.
- Place sweet potatoes on baking sheet or directly on oven rack with a sheet underneath to catch drips.
- Bake 45–60 minutes, until very tender and juices are bubbling out. Time varies by size.
