Description
Bright, fresh-tasting homemade strawberry freezer jam made with ripe strawberries, sugar, and powdered pectin. Ready in minutes and perfect for freezing or keeping in the fridge for weeks.
Ingredients
- Fresh Strawberries, 2 pounds (about 4 cups mashed)
- Granulated Sugar, 4 cups
- Powdered Fruit Pectin, 1 box (1.75 ounces)
- Water, 3/4 cup
Instructions
- Wash containers, lids, and utensils thoroughly and let them dry completely.
- Mash the strawberries in a large bowl until chunky, then stir in the sugar and let the mixture sit for 10 minutes, stirring occasionally.
- In a small saucepan, combine the water and powdered pectin, bring to a boil while stirring constantly and maintain a boil for 1 minute.
- Pour the hot pectin mixture into the strawberry and sugar mixture, then stir vigorously for 3 minutes until the mixture is glossy and well combined.
- Ladle the jam into clean, freezer-safe containers leaving 1/2 inch of headspace, then seal tightly with lids.
- Let jars sit at room temperature for 24 hours to finish setting, then store in the freezer for up to 1 year or in the refrigerator for up to 3 weeks.
Notes
- Use fully ripe but firm strawberries for the best flavor and texture.
- Do not reduce the sugar unless using a low-sugar or no-sugar pectin formulated for that purpose.
- Label containers with the date so you know when they were made.
