- 2 slices sourdough bread
- 2 tablespoons butter, softened
- 1/4 cup sharp cheddar cheese, shredded
- 1/4 cup Gruyère cheese, shredded
- 1 tablespoon Dijon mustard
- 1/4 cup caramelized onions
- 1/4 cup sliced tomatoes
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme (optional)
Instructions
- Butter one side of each slice of sourdough bread with the softened butter.
- Spread a thin layer of Dijon mustard on the unbuttered side of one slice of bread.
- Layer the shredded sharp cheddar and Gruyère cheeses on top of the mustard-covered bread.
- Top the cheese with caramelized onions, sliced tomatoes, and fresh thyme, if using.
- Place the other slice of bread on top, buttered side out.
- Heat a skillet over medium heat. Place the sandwich in the pan and cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Remove from the pan and let rest for 1 minute before slicing and serving.
