			- 1 pound ground beef
 - 3 medium potatoes, thinly sliced
 - 1 medium onion, chopped
 - 3 cloves garlic, minced
 - 1 bell pepper, diced
 - 2 tablespoons olive oil
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 teaspoon paprika
 - 1/2 teaspoon dried thyme
 - 1/2 cup shredded cheddar cheese (optional)
 - 2 tablespoons chopped fresh parsley
 
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
 - Add onion and garlic, sauté until fragrant and softened.
 - Add ground beef, cook until browned, and drain any excess fat.
 - Push beef to one side of the skillet, then add sliced potatoes and bell pepper to the other side.
 - Season everything with salt, black pepper, paprika, and thyme.
 - Cook while stirring occasionally until potatoes are golden and tender, adding a splash of broth or water if needed.
 - Sprinkle cheese on top, cover to melt, then garnish with chopped parsley before serving.
