- 1 bunch fresh asparagus, trimmed
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/4 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley (optional)
- 1 tablespoon toasted pine nuts (optional)
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 2 tablespoons extra virgin olive oil (for vinaigrette)
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Toss asparagus with olive oil, salt, and pepper.
- Grill asparagus for 3–5 minutes, turning occasionally, until tender and lightly charred.
- In a small bowl, whisk together lemon juice, lemon zest, Dijon mustard, and extra virgin olive oil to make the vinaigrette.
- Transfer grilled asparagus to a serving platter. Drizzle with the vinaigrette.
- Top with crumbled feta cheese, parsley, and pine nuts if using. Serve warm or at room temperature.
Notes
- For extra flavor, add a pinch of chili flakes to the vinaigrette.
- Can be served as a light lunch with a poached egg on top.
- Try using goat cheese instead of feta for a creamier texture.
