Description

Grilled Asparagus Salad with Feta & Lemon is a fresh, light, and flavorful side dish featuring tender grilled asparagus, creamy feta cheese, and a zesty lemon vinaigrette. Perfect for spring and summer meals.


Ingredients

  • 1 bunch fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 tablespoon toasted pine nuts (optional)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 2 tablespoons extra virgin olive oil (for vinaigrette)

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Toss asparagus with olive oil, salt, and pepper.
  3. Grill asparagus for 3–5 minutes, turning occasionally, until tender and lightly charred.
  4. In a small bowl, whisk together lemon juice, lemon zest, Dijon mustard, and extra virgin olive oil to make the vinaigrette.
  5. Transfer grilled asparagus to a serving platter. Drizzle with the vinaigrette.
  6. Top with crumbled feta cheese, parsley, and pine nuts if using. Serve warm or at room temperature.

Notes

  • For extra flavor, add a pinch of chili flakes to the vinaigrette.
  • Can be served as a light lunch with a poached egg on top.
  • Try using goat cheese instead of feta for a creamier texture.
