Description

Classic Chicken Parmesan gets a crispy, cheesy upgrade with a golden panko crust, rich tomato sauce, and a bubbly trio of mozzarella, provolone, and Parmesan cheeses. This comforting Italian-American favorite is oven-baked to melty perfection and ready to impress!

  • 4 skinless, boneless chicken breast halves
  • Salt and freshly ground black pepper, to taste
  • 2 large eggs
  • 1 cup panko bread crumbs (or more as needed)
  • 3/4 cup grated Parmesan cheese, divided
  • 2 tablespoons all-purpose flour (or more as needed)
  • 1/2 cup olive oil for frying (or as needed)
  • 1/2 cup prepared tomato sauce
  • 1/4 cup fresh mozzarella, cut into small cubes
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated provolone cheese
  • 2 teaspoons olive oil

Instructions

  1. Preheat oven to 450°F (230°C). Gather all ingredients.
  2. Place chicken breasts between two sheets of plastic wrap or in freezer bags and pound to 1/2-inch thickness using a meat mallet.
  3. Season chicken on both sides with salt and pepper. Lightly dust both sides with flour using a sifter or strainer.
  4. In a shallow bowl, beat the eggs. In another bowl, combine panko bread crumbs and 1/2 cup Parmesan cheese.
  5. Dip each flour-coated chicken breast into the beaten eggs, then press into the breadcrumb mixture, coating both sides thoroughly. Let rest for 10–15 minutes.
  6. Heat 1/2 inch olive oil in a large skillet over medium-high heat until shimmering. Fry each chicken breast for about 2 minutes per side, until golden brown. Transfer to a baking dish.
  7. Top each breast with 2 tablespoons of tomato sauce, then layer evenly with mozzarella cubes, chopped basil, and provolone cheese.
  8. Sprinkle remaining Parmesan over the top and drizzle each breast with 1/2 teaspoon olive oil.
  9. Bake in the preheated oven for 15–20 minutes, or until cheese is browned and bubbly and internal temperature reaches 165°F (74°C).
