- 3 large russet potatoes, peeled or skin-on, cut into fries
- 6–8 garlic cloves, finely minced or grated
- 1 cup freshly grated Parmesan cheese
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- Vegetable oil, for frying
Instructions
- Heat vegetable oil in a deep pan or fryer to 325°F (163°C). Line a tray with paper towels.
- In a small saucepan, gently heat olive oil and minced garlic until golden and fragrant, about 2–3 minutes. Set aside.
- Soak the cut potatoes in cold water for at least 30 minutes, then dry thoroughly with towels.
- Fry the potatoes in batches for 4–5 minutes. Remove and let them rest for 10 minutes. Increase oil temperature to 375°F (190°C).
- Fry the potatoes a second time until golden and crisp, about 2–3 minutes. Drain on paper towels.
- Immediately toss hot fries in a large bowl with garlic oil, Parmesan cheese, salt, and black pepper.
- Sprinkle with chopped parsley and serve hot.
