- 4 chicken thighs or breasts (bone-in preferred)
- 1½ pounds baby potatoes, halved
- 5 garlic cloves, minced
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking sheet.
- In a bowl, mix melted butter, minced garlic, olive oil, Italian seasoning, paprika, salt, and pepper.
- Toss chicken and potatoes in the garlic butter mixture until evenly coated.
- Arrange chicken and potatoes on the baking sheet, leaving space between pieces.
- Sprinkle half of the Parmesan cheese on top and roast for 40–45 minutes, flipping potatoes halfway.
- Once golden and cooked through, add the remaining Parmesan and chopped parsley.
- Broil for 2–3 minutes for a crispy finish, then let rest before serving.
Notes
- Use bone-in chicken for juicier meat.
- Parboil potatoes for 5 minutes before roasting for extra crispness.
- Freshly grated Parmesan gives the best flavor and melt.
- Add a squeeze of lemon juice before serving to brighten flavors.
