Description

A cozy one-pan meal featuring juicy chicken and crispy potatoes tossed in a rich garlic butter sauce and topped with golden Parmesan cheese. Simple, flavorful, and perfect for any night of the week.


Ingredients

  • 4 chicken thighs or breasts (bone-in preferred)
  • pounds baby potatoes, halved
  • 5 garlic cloves, minced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking sheet.
  2. In a bowl, mix melted butter, minced garlic, olive oil, Italian seasoning, paprika, salt, and pepper.
  3. Toss chicken and potatoes in the garlic butter mixture until evenly coated.
  4. Arrange chicken and potatoes on the baking sheet, leaving space between pieces.
  5. Sprinkle half of the Parmesan cheese on top and roast for 40–45 minutes, flipping potatoes halfway.
  6. Once golden and cooked through, add the remaining Parmesan and chopped parsley.
  7. Broil for 2–3 minutes for a crispy finish, then let rest before serving.

  • Use bone-in chicken for juicier meat.
  • Parboil potatoes for 5 minutes before roasting for extra crispness.
  • Freshly grated Parmesan gives the best flavor and melt.
  • Add a squeeze of lemon juice before serving to brighten flavors.
