Ingredients

- 2 cups old-fashioned oats
- 1 cup all-purpose flour
- 3/4 cup brown sugar
- 1/2 cup (1 stick) butter, melted
- 1 cup chocolate chips
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
Instructions
- Preheat oven to 350°F (175°C) and grease or line an 8×8-inch pan with parchment paper
- In a mixing bowl, stir together oats, flour, brown sugar, salt, and baking soda
- Melt butter and chocolate together gently, then mix in egg and vanilla extract
- Combine wet and dry ingredients until fully incorporated
- Press half of the oat mixture into the pan, spread half of the chocolate mixture on top, then layer remaining oat mixture and press gently
- Bake for 25–30 minutes until top is set and edges lightly golden
- Allow to cool completely in the pan for at least 20 minutes before slicing
- Slice into squares and enjoy
Notes
- Use old-fashioned oats for the best chewy texture
- Let bars cool completely before slicing for clean edges
- Store in an airtight container at room temperature for 3–4 days or freeze for up to 2 months
- Add nuts, dried fruit, or sprinkle sea salt for a creative twist
