- 4 cups cooked jasmine rice, chilled
- 300 grams beef sirloin, thinly sliced
- 1 cup pickled mustard greens, finely chopped
- 1 cup shredded mozzarella cheese
- 2 large eggs, lightly beaten
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 2 spring onions, sliced
- 1 teaspoon freshly ground black pepper
Instructions
- Heat a large skillet or wok over medium high heat until hot.
- Add vegetable oil and sauté the minced garlic for about 30 seconds until fragrant.
- Add the thinly sliced beef and stir fry for 2 to 3 minutes until just cooked through.
- Push the beef to one side of the pan and pour in the beaten eggs. Scramble gently until set, then mix with the beef.
- Add the chilled jasmine rice and break up any clumps while stir frying.
- Stir in the chopped pickled mustard greens, soy sauce, black pepper, and sesame oil. Toss continuously for about 5 minutes until heated through and slightly crispy in spots.
- Turn off the heat and fold in the shredded mozzarella cheese, allowing the residual heat to melt it gently.
- Sprinkle sliced spring onions on top and serve warm.
Notes
- Use day old rice for the best texture and to prevent mushiness.
- Slice the beef thinly against the grain to keep it tender.
- Taste before adding extra soy sauce since the pickled greens are already salty.
- Let the rice sit undisturbed briefly in the pan to develop light crispiness.
