Description

A comforting and flavor-packed fried rice made with tender beef, tangy pickled mustard greens, fluffy jasmine rice, and melted mozzarella cheese. Savory, slightly tangy, and irresistibly creamy in every bite.


Ingredients

  • 4 cups cooked jasmine rice, chilled
  • 300 grams beef sirloin, thinly sliced
  • 1 cup pickled mustard greens, finely chopped
  • 1 cup shredded mozzarella cheese
  • 2 large eggs, lightly beaten
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 spring onions, sliced
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Heat a large skillet or wok over medium high heat until hot.
  2. Add vegetable oil and sauté the minced garlic for about 30 seconds until fragrant.
  3. Add the thinly sliced beef and stir fry for 2 to 3 minutes until just cooked through.
  4. Push the beef to one side of the pan and pour in the beaten eggs. Scramble gently until set, then mix with the beef.
  5. Add the chilled jasmine rice and break up any clumps while stir frying.
  6. Stir in the chopped pickled mustard greens, soy sauce, black pepper, and sesame oil. Toss continuously for about 5 minutes until heated through and slightly crispy in spots.
  7. Turn off the heat and fold in the shredded mozzarella cheese, allowing the residual heat to melt it gently.
  8. Sprinkle sliced spring onions on top and serve warm.

Notes

  • Use day old rice for the best texture and to prevent mushiness.
  • Slice the beef thinly against the grain to keep it tender.
  • Taste before adding extra soy sauce since the pickled greens are already salty.
  • Let the rice sit undisturbed briefly in the pan to develop light crispiness.
