- 2 pounds fresh figs, stemmed and chopped
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1/4 cup water
- Pinch of salt
Instructions
- Wash and sterilize your glass jars by boiling them or using the dishwasher.
- In a medium saucepan, combine the chopped figs, sugar, lemon juice, lemon zest, water, and salt.
- Bring the mixture to a gentle simmer over medium-low heat.
- As the figs soften, stir frequently and use a spoon or masher to break them down slightly.
- Simmer for about 45 minutes, stirring occasionally, until the jam thickens to your desired consistency.
- Taste and adjust lemon or sugar as needed, then remove from heat and let cool slightly.
- Spoon into sterilized jars, seal, and refrigerate.
Notes
- Add a sprig of rosemary or thyme during cooking for herbal flavor.
- Use dried figs if fresh are not available (soak first).
- Can be frozen for longer storage.
