- 1 lb lean ground beef
- 1/2 large yellow onion, diced
- 2 tsp garlic, minced
- 1 oz onion soup mix (just the mix)
- 1 cup frozen peas and carrots (or preferred vegetable)
- 2 cups low sodium beef broth
- 10 oz cheese-filled tortellini (about 3 cups, refrigerated type)
- 1 cup Gruyère cheese, shredded
- 1/2 cup sour cream
- 1/2 tsp black pepper
Instructions
- In a large skillet over medium-high heat, brown the ground beef and diced onion until the beef is no longer pink and the onion is tender. Drain any excess fat.
- Add garlic and onion soup mix to the pan. Cook for about 30 seconds until fragrant and well mixed.
- Stir in the frozen vegetables and beef broth. Bring the mixture to a boil.
- Add the tortellini, cover the skillet, and let it cook for about 7 minutes, stirring occasionally, until the tortellini are tender.
- Reduce heat to low and stir in the sour cream and shredded Gruyère cheese until fully combined and creamy.
- Season with black pepper to taste. Serve warm and enjoy!
Notes
- For extra flavor, caramelize the onions before adding the beef.
- Swap out Gruyère for shredded mozzarella or Swiss cheese if desired.
- Use any frozen veggie mix you prefer—green beans or corn work great too!
