  • 1 oz onion soup mix (just the mix)
  • 1 cup frozen peas and carrots (or preferred vegetable)
  • 2 cups low sodium beef broth
  • 10 oz cheese-filled tortellini (about 3 cups, refrigerated type)
  • 1 cup Gruyère cheese, shredded
  • 1/2 cup sour cream
  • 1/2 tsp black pepper

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef and diced onion until the beef is no longer pink and the onion is tender. Drain any excess fat.
  2. Add garlic and onion soup mix to the pan. Cook for about 30 seconds until fragrant and well mixed.
  3. Stir in the frozen vegetables and beef broth. Bring the mixture to a boil.
  4. Add the tortellini, cover the skillet, and let it cook for about 7 minutes, stirring occasionally, until the tortellini are tender.
  5. Reduce heat to low and stir in the sour cream and shredded Gruyère cheese until fully combined and creamy.
