Fiesta Tater Tot Casserole is a hearty and flavorful dish layered with seasoned ground beef, beans, corn, cheese, and crispy tater tots — a perfect Tex-Mex twist on a comfort food classic.

- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (frozen or canned)
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel), drained
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
- Chopped green onions and sour cream for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes to blend flavors. Season with salt and pepper if needed.
- Transfer the beef mixture to a greased 9×13-inch baking dish and spread evenly.
- Sprinkle 1 1/2 cups of shredded cheddar cheese over the beef mixture.
- Arrange tater tots in a single layer on top of the cheese.
- Bake uncovered for 35–40 minutes, or until tater tots are golden brown and crispy.
- Remove from oven and sprinkle with remaining 1/2 cup of cheese. Return to oven for 5 minutes until melted.
- Garnish with chopped green onions and serve with sour cream if desired.
Notes
- For a spicier version, use hot taco seasoning or add jalapeños.
- You can substitute ground turkey or chicken for the beef.
- This dish freezes well and makes great leftovers.
