Description

Ingredients

  • 4 cups mixed leafy greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 1 large carrot, peeled and shaved
  • 1/4 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 cup microgreens
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. Ensure all vegetables are washed and greens are completely dry using a salad spinner or towel.
  2. In a large bowl, add the mixed leafy greens, cherry tomatoes, cucumber, shaved carrot, red onion, and microgreens.
  3. In a separate jar or small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until emulsified.

  5. Gently toss everything together to coat evenly.
