Ingredients

Units Scale

Main Ingredients

  • 200g thinly sliced well-marbled beef
  • 100g fresh enoki mushrooms, root trimmed
  • 2 tbsp soy sauce
  • 1 tbsp mirin (or rice wine)
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp vegetable oil
  • Sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Prepare Your Ingredients: Gently wash the enoki mushrooms and trim off their root base. Lay the thin beef slices on a clean surface and season lightly with salt, pepper, minced garlic, and grated ginger to infuse aromatic flavors.
  2. Roll the Enoki Mushrooms in Beef: Place a small handful of enoki mushrooms on one edge of each beef slice and roll tightly to encase the mushrooms securely inside.
  3. Heat and Sear the Rolls: Heat vegetable oil in a skillet over medium-high heat. Sear each beef roll until browned on all sides, about 2 to 3 minutes per side, to lock in juices and develop a caramelized crust.
  4. Add Sauce and Simmer: Mix soy sauce with mirin and pour the mixture over the seared rolls. Reduce the heat to low and let the rolls simmer for 3 to 5 minutes to allow the flavors to meld perfectly.
  5. Garnish and Serve: Sprinkle toasted sesame seeds and/or chopped green onions on top before plating to enhance flavor and presentation.

Notes

  • Slice the beef as thinly as possible for easy rolling and a tender bite.
  • Cook in batches to avoid overcrowding the pan, ensuring each piece browns nicely.
  • Use fresh enoki mushrooms for the best texture and mild flavor.
  • Marinate the beef briefly (about 15 minutes) to infuse flavor without overpowering the mushrooms.
  • Roll firmly to keep mushrooms secure and ensure even cooking.
