Description

These easy spinach feta baked omelets are a quick and healthy breakfast or brunch option. Packed with spinach, feta cheese, and eggs, they are both satisfying and nutritious.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners (for individual omelets) or a baking dish for a larger version.
  2. Heat olive oil in a small pan over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.
  3. Add the chopped spinach to the pan and cook for 1-2 minutes until wilted. Remove from heat and set aside.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and dried oregano (if using).
  5. Stir in the sautéed spinach mixture and crumbled feta cheese into the egg mixture.
  6. Pour the mixture into the prepared muffin tin or baking dish, filling each cup or the dish evenly.
  7. Bake for 15-18 minutes (for muffin tin) or 25-30 minutes (for a baking dish) until the omelets are set and lightly golden on top.
  8. Allow the omelets to cool for a few minutes before serving. Enjoy!

Notes

  • You can substitute the spinach with other greens, such as kale or arugula, if preferred.
  • Feel free to add other ingredients like bell peppers, mushrooms, or tomatoes for extra flavor.
  • These omelets can be stored in the refrigerator for up to 3 days. Reheat in the microwave before serving.
