These easy spinach feta baked omelets are a quick and healthy breakfast or brunch option. Packed with spinach, feta cheese, and eggs, they are both satisfying and nutritious.

- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried oregano (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners (for individual omelets) or a baking dish for a larger version.
- Heat olive oil in a small pan over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.
- Add the chopped spinach to the pan and cook for 1-2 minutes until wilted. Remove from heat and set aside.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and dried oregano (if using).
- Stir in the sautéed spinach mixture and crumbled feta cheese into the egg mixture.
- Pour the mixture into the prepared muffin tin or baking dish, filling each cup or the dish evenly.
- Bake for 15-18 minutes (for muffin tin) or 25-30 minutes (for a baking dish) until the omelets are set and lightly golden on top.
- Allow the omelets to cool for a few minutes before serving. Enjoy!
Notes
- You can substitute the spinach with other greens, such as kale or arugula, if preferred.
- Feel free to add other ingredients like bell peppers, mushrooms, or tomatoes for extra flavor.
- These omelets can be stored in the refrigerator for up to 3 days. Reheat in the microwave before serving.
