- 1 pound chicken thighs, boneless and skinless
- 4 cups chicken broth
- 3 tablespoons white miso paste
- 2 tablespoons fresh ginger, grated
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 to 2 teaspoons chili paste
- 1 teaspoon sesame oil
- 3 green onions, sliced
- 1 cup shiitake mushrooms, sliced
- 2 cups baby spinach
- Salt and pepper to taste
Instructions
- Warm your pot over medium heat.
- Add sesame oil, then stir in ginger and garlic until fragrant.
- Pour in chicken broth and soy sauce, stirring gently.
- Add chicken pieces and mushrooms to the pot.
- Simmer for about 15 minutes until the chicken is cooked through.
- Dissolve miso in warm broth separately and stir it into the pot with spinach and chili paste.
- Ladle into bowls and top with green onions.
Notes
- Add extra ginger for more warmth.
- Avoid boiling miso to prevent bitterness.
- Taste and adjust seasoning before serving.
