Description

A warm, comforting 30 minute bowl of tender chicken simmered in a miso ginger spicy broth that is rich, cozy, and full of layered flavor.


Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 tablespoons white miso paste
  • 2 tablespoons fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 to 2 teaspoons chili paste
  • 1 teaspoon sesame oil
  • 3 green onions, sliced
  • 1 cup shiitake mushrooms, sliced
  • 2 cups baby spinach
  • Salt and pepper to taste


Instructions

  1. Warm your pot over medium heat.
  2. Add sesame oil, then stir in ginger and garlic until fragrant.
  3. Pour in chicken broth and soy sauce, stirring gently.
  4. Add chicken pieces and mushrooms to the pot.
  5. Simmer for about 15 minutes until the chicken is cooked through.
  6. Dissolve miso in warm broth separately and stir it into the pot with spinach and chili paste.
  7. Ladle into bowls and top with green onions.

Notes

  • Add extra ginger for more warmth.
  • Avoid boiling miso to prevent bitterness.
