- 1/2 cup fresh lemon juice (about 2 lemons)
- 2 tsp lemon zest
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a tart pan or a pie dish with cooking spray or butter.
- In a medium bowl, whisk together granulated sugar, lemon juice, lemon zest, eggs, heavy cream, vanilla extract, and salt until smooth.
- Pour the mixture into the prepared tart pan, spreading it evenly.
- Bake for 20–25 minutes, or until the tart is set and lightly golden around the edges. The center should still jiggle slightly when gently shaken.
- Allow the tart to cool to room temperature, then refrigerate for at least 2 hours to fully set.
- Once chilled, dust with powdered sugar before serving, if desired.
Notes
- For a smoother texture, strain the mixture before baking to remove any zest or egg bits.
- This tart can be made a day in advance and stored in the refrigerator.
- Serve with fresh berries or whipped cream for extra flavor.
