- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Heat a large pot or Dutch oven over medium heat and add the olive oil.
- Sauté the diced onion for about 5 minutes until translucent, then add garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in chili powder, cumin, paprika, salt, and pepper. Let spices toast for 1 minute.
- Mix in tomato paste, diced tomatoes, kidney beans, and beef broth.
- Bring to a simmer and cook uncovered for 25–30 minutes, stirring occasionally.
- Adjust seasoning if needed. Simmer longer for a thicker chili if desired.
- Serve hot with your favorite toppings.
