- 1 cup milk
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 1 can (10.5 oz) cream of chicken soup
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk (for dumplings)
- 2 tablespoons unsalted butter, melted
- 1/4 cup fresh parsley, chopped (optional, for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, celery, carrots, and garlic. Sauté for 5-7 minutes, until the vegetables are softened.
- Pour in the chicken broth, milk, thyme, rosemary, salt, and pepper. Bring to a simmer.
- Add the cooked, shredded chicken and the cream of chicken soup. Stir to combine and let simmer for another 5 minutes.
- While the soup is simmering, prepare the dumplings: In a medium bowl, whisk together flour, baking powder, and salt. Add the milk and melted butter, stirring until a thick batter forms.
- Using a spoon, drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot with a lid and let cook for 15-20 minutes, or until the dumplings have risen and are fully cooked through.
