Description

  • 2 celery stalks, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (for dumplings)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, celery, carrots, and garlic. Sauté for 5-7 minutes, until the vegetables are softened.
  2. Pour in the chicken broth, milk, thyme, rosemary, salt, and pepper. Bring to a simmer.
  3. Add the cooked, shredded chicken and the cream of chicken soup. Stir to combine and let simmer for another 5 minutes.
  4. While the soup is simmering, prepare the dumplings: In a medium bowl, whisk together flour, baking powder, and salt. Add the milk and melted butter, stirring until a thick batter forms.
  5. Using a spoon, drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot with a lid and let cook for 15-20 minutes, or until the dumplings have risen and are fully cooked through.
  6. Once the dumplings are done, garnish with fresh parsley if desired, and serve hot. Enjoy your easy chicken and dumplings!

Notes
