Description

This Easy Bruschetta Recipe features juicy Roma tomatoes, fresh basil, garlic, parmesan, and a splash of balsamic vinegar all served over golden, toasted French bread slices. It’s the perfect appetizer for summer gatherings or a quick snack packed with fresh flavor!


Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 1/2 Tbsp minced fresh garlic
  • 26 oz Roma tomatoes, diced (about 7-8 tomatoes)
  • 1/4 cup finely shredded parmesan cheese
  • 1 Tbsp balsamic vinegar, or more to taste
  • 3/4 tsp kosher salt, plus more to taste
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup chopped basil ribbons (chiffonade)
  • 1 (14.5 oz) loaf hearty French bread, sliced into 1/2-inch thick slices (about 12 slices)

Instructions

  1. Heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and sauté until just beginning to turn golden, about 1 minute. Do not brown.
  2. Pour garlic and oil mixture into a large mixing bowl and let cool while preparing the tomatoes and basil.
  3. Add diced Roma tomatoes to the bowl with the cooled oil and garlic mixture.
  4. Stir in parmesan, balsamic vinegar, chopped basil, salt, and black pepper. Toss well to combine. Adjust seasoning to taste.
  5. To toast the bread: Preheat broiler with rack positioned a few inches from heat source. Arrange bread slices on a large baking sheet.
  6. Broil first side until golden brown, about 1 minute. Flip and broil the opposite side until golden as well.
  7. Spoon the tomato mixture generously over the toasted bread slices. Include some of the juices for added flavor. Garnish with additional parmesan if desired and serve immediately.

Notes

  • Use the freshest tomatoes and basil for best flavor.
  • Prepare the tomato mixture no more than 1–2 hours in advance for optimal texture.
  • To make ahead, toast the bread and store separately, and assemble just before serving.
