Description

Rich chocolate cupcakes filled with sweet cherries and topped with fluffy whipped cream and a fresh cherry.


Ingredients

  • 1 and 1/4 cups all purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1 cup cherry pie filling
  • 1 and 1/4 cups heavy cream
  • 3 tablespoons powdered sugar
  • 12 fresh cherries


Instructions

  1. Preheat the oven to 350°F and line a 12 cup muffin tin with cupcake liners.
  2. Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a mixing bowl.
  3. In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, then slowly add the boiling water and mix until smooth.
  5. Fill each cupcake liner about two thirds full with batter.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. Core each cupcake and fill the center with cherry pie filling.
  8. Whip the heavy cream with powdered sugar until soft peaks form, then pipe onto cupcakes.
  9. Top each cupcake with a fresh cherry.
