- Return the tempered yolks to the saucepan, stirring continuously.
- Cook on low heat for about 5-7 minutes until the mixture thickens slightly and coats the back of a spoon.

- Remove the custard from heat and stir in the vanilla extract.
- Pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
- Stir in the chopped dark chocolate.
- Cover the mixture and chill in the refrigerator for at least 4 hours or overnight until completely cold.
