Description

A cool, crunchy, and creamy cucumber dish tossed in a bold, spicy peanut sauce that comes together in minutes.

Ingredients

Scale
  • 2 large cucumbers, thinly sliced
  • 3 tablespoons smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 to 2 teaspoons chili paste
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 1 teaspoon sesame oil
  • 1 to 2 tablespoons warm water
  • 1 teaspoon sesame seeds
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Whisk peanut butter, soy sauce, rice vinegar, chili paste, honey, garlic, sesame oil, and warm water in a bowl until smooth.
  2. Place sliced cucumbers in a serving bowl.
  3. Pour the spicy peanut sauce over the cucumbers.
  4. Toss gently until the slices are evenly coated.
  5. Sprinkle cilantro and sesame seeds on top.
  6. Serve immediately or chill for later.

Notes

  • Add water gradually to reach a silky sauce texture.
  • English cucumbers work best because they stay crisp.
  • Adjust the heat level by increasing or reducing chili paste.
